This Victoria Day weekend's weather was pretty brutal, especially yesterday when it rained buckets, canceling my plans for a volleyball game with some friends at the Beaches. It looks like today will be different and we will be getting a reprieve. The sun has come out, making it the perfect day for a barbecue. I do have company coming over and I want to do things a bit different and try some new recipes.
Here is where I need some help. Can any of you barbecuing enthusiasts post your favorite barbecuing recipes? I am planning on doing chicken, pork, steak, salmon, potatoes and corn on the cob.
Your suggestions and barbecuing tips will be most welcome.

Victoria Day Barbecue Recipes

Here is my favorite. This is for barbecue pork chops:
For the marinade:
1/4 cup plus 1 tablespoon fresh lemon juice
3 tablespoons soy sauce
1 tablespoon extra-virgin olive oil
1/2 teaspoon light brown sugar
1/4 teaspoon chopped fresh rosemary
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 pork rib chops, about 1-1/4 inches thick each
To make the marinade: In a medium bowl whisk together the marinade ingredients.
Place the chops in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 20 to 30 minutes.
Remove the chops from the bag and discard the marinade. Allow to stand at room temperature for 20 to 30 minutes before grilling.
Sear the chops over Direct High heat for 6 minutes, turning once halfway through searing time. Continue grilling over Indirect Medium heat until the juices run clear, 6 to 8 minutes. Season with salt and pepper.
Barbecue Salmon Steaks
Ingredients:
4 (4- to 6-ounce) salmon steaks
***SAUCE***
3 tablespoons melted butter
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1/4 teaspoon grated lemon peel
1/4 teaspoon garlic salt
1/4 teaspoon salt
1 dash hot pepper sauce (optional)
Directions:
Combine the sauce ingredients stirring thoroughly. Generously brush both sides of the salmon steaks with mixture.
Pre-heat grill. Grill salmon steaks 6-8 minutes, depending on the thickness of your steaks.
Baste frequently. Turn once, brushing with sauce. Steaks should flake easily when tested with a fork.

Barbecue Chicken
2 pounds boneless, skinless chicken breasts
3/4 cup Mustard
3/4 cup brown sugar, packed
1/3 cup cider vinegar
1/3 cup Worcestershire sauce
Directions
Place chicken in dish. Combine remaining ingredients. Pour 1 cup
sauce over chicken; marinate in refrigerator for 30 minutes or up to 3 hours. (Discard marinade.)
Heat reserved sauce to boiling. Simmer 5 minutes until sauce
thickens, stirring often.
Grill chicken for 10 minutes until it is no longer pink in center. Serve chicken with reserved sauce.
This may be too late for your barbeque for Victoria day but good for future barbeques.
